Synie’s, just down the street from Bon Marché is definitely the place on the
Left Bank to visit if you want to try some tasty pastry. Synie Georgulas has been baking cupcakes in for a while but it was only in September of 2009 that she opened her first shop. Paris
I thought she was French but her accent betrayed her British roots and her name (come on!) betrays her Greek heritage. No matter where she comes from or where she lives, only one thing matters: Synie loves cupcakes.
She especially appreciates the cupcake’s potential for personalization. Colors, flavor combinations, decorations, icings, she loves having fun with all of them while adapting them to the (oftentimes) picky French palette. At any given moment there will be 12-18 sweet combinations in her shop for sale. She uses the highest quality ingredients and the varieties change with the seasons to profit from the best products available.
She even has savory cupcakes, relatively unknown to Americans. Imagine savory muffins with pesto or cream cheese icings. You can have a whole meal just out of cupcakes!
But the sweets remain key. Ginger, rose, strawberry, and traditional flavors like chocolate and café will please the most finicky and the most daring cupcake enthusiast. Her red velvet is nothing to laugh at, either! If you have trouble choosing, try the cupcake du jour to taste something unique.
